Ingredients
1- 3/4 cups flour
1/3 cup sugar
2- 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup fresh or thawed frozen blueberries
1/2 cup berries (your choice)
1/2 cup white chocolate chips
3/4 cup milk
1 egg beaten
1/3 cup butter, melted
1 1/2 tsp vanilla (optional)
Directions:
- Preheat oven to 400 F.
- Lightly spray muffin pan with cooking oil.
- In a bowl combine flour, sugar, baking powder, salt. Add milk, egg, and melted butter. Mix until
dry ingredients become lumpy. Do not over beat. - Fold in berries, and white chips.
- Divide batter evenly among prepared muffin cups.
- Bake 20 to 25 minutes or until tops spring back when lightly touched.
Recipe makes 2 dozen mini muffins.
